This unique nourishing food, sometimes spelt ‘amasake’, is a fermented sweet rice. It’s made by cooking the whole rice grain in water along with a unique starter called ‘koji’. This is treated with a special yeast culture which, ingeniously, converts the starch held in the rice into simpler sugars. Texture-wise, our natural and organic amazake is fairly similar to rice-pudding – and it has a beautifully balanced sweetness.
